Tuffy's BBQ class came in the form of a bonus; he appeared for several hours while we were at the Smokin' Trigger's BBQ School. And... he brought his smoker and spread-sheet along with him. I believe he gave Johhny and Trish a chance to take a much-needed break.

While Tuffy is a very nice guy — and his class is a worthwhile BBQ class — I'd advise those who are new to the game to take take this class. If you've been cooking BBQ for many years, and you're looking for a high-level tune-up, this isn't the class for you.

Tuffy covers the basic's well. You'll want to be sure to bring a notebook: the Professor will impart many things you'll want to take note of.
Let's begin with the basics:

  • Make sure you have adequate help
  • Choose a catchy, descriptive name for your BBQ team
  • Stock all of the tools/supplies you'll need
  • Make a check-off list of your tools, daily objectives, and goals
  • Keep your work area(and tools) well-maintained and clean
  • Be sure you and your team are well groomed


  • Making a check-off list of your your daily goals is imperative. Tuffy's use of a spread-sheet is a good method, but a simple notebook will suffice. It's a good idea to equip each and every teammate of yours with a daily copy of your agenda: this keeps everyone on the same page, so-to-speak.

    The old adage, the right tool for the job is crucial in the BBQ world. You'll often-time find youself miles from a supply store — and should the store be closer — there's no guarantee that they'll have what you need, in stock. This is especially true of BBQ tools. Try finding an extra-long pair of tongs at your local grocery store. As any boy scout will tell you: be prepared!

    At all cost: keep your work area and untensil's clean and well-maintained. You don't want to be the person going camp-to-camp, begging for a knife sharpener. Utensils should have their own check-list.

    Have enough helping-hands onsite.
    You cannot do everything yourself!

    Lastly: ensure that every member of your team is clean and neatly dressed.
    Consider purchasing matching t-shirts and cooking aprons. Signage with your team name is money well-spent.
    Keeping your team name in the forefront of Competition workers and Judges will make your team standout in their minds.
    You cannot win a Competition if no one knows who you are!

    Assemble the following products:

  • 1 bottle of Cool Smoke rub
  • 1 large bottle of Apple Juice (not Cider)
  • 1 box of light brown sugar
  • 1 bottle of Pure Clover honey
  • 1 bottle Cool Smoke Barbecue sauce
  • 1 bottle of apple cider vinegar
  • 1 stick unsalted butter
  • 1 empty spray bottle (you should keep several of these on-hand)
