Paul Kirk's class is one that I recommend for the newer BBQ enthusiest. Although there is much that he can impart to even the experience grillmaster, this class seemed to be tipped on the scale of the newbie, as opposed to the veteran Grillmaster.

Paul's resume makes for an interesting read. He was once a sous-chef in Julia Child's kitchen.
As a 7-time World Chamion, Paul established his own reputation for excellence within the Competition world of BBQ. Keep Kirk's words of wisdom close:

"The key to a good sauce is the balance of its flavors. For every sour note, add a sweet one; for every hot flavor, add something mild."

Although he can sharpen up anyone's Pittmaster skill-set, I found Paul's hand-out of buildable sauces and rubs to be the most beneficial for my purposes.
